2 oz Plymouth gin¾ oz demerara syrup (1:1)½ oz lemon juice½ oz lime juice1 egg white6 drops orange flower water3 drops vanilla extract3 dashes orange bitters¾ oz heavy creamsoda water, to top
instructions :

Combine all ingredients in a shaker except cream and soda water and dry shake.

Add cream with 1 large ice cube and 1 small ice cube. Shake until ice is dissolved.

Pour the drink into a Collins glass and set in the freezer until the meringue has separated from the liquid beneath, about 5 minutes.

Place a barspoon into the middle of the drink and carefully pour soda water along the spoon until the meringue has risen above the rim of the glass.

Express a lemon twist over the drink and discard.

Blended option (for 2 min) :

Multiply the ingredients by the number of serving.

Combine all ingredients except soda water in a blender and blend a medium speed for 1 minutes.

Add ½ crushed ice by serving and blend again at medium speed for 2-3 minutes.

Pour the drink into Collins glasses and set in the fridge until the meringue has separated from the liquid beneath, about 5 minutes.

Place a barspoon into the middle of the drink and carefully pour soda water along the spoon until the meringue has risen above the rim of the glass
